Steve, the servers and bartenders do taste some of the wines. We have wine trainings periodically. The lucky ones that are here in the afternoons get to taste some of the exceptional (and expensive) ones when the vendors bring them.

That is the tough part -- not letting your list get to heavy with your personal preferences. Mine would be all Malbec, Merlot, Cab, Zin, & Carmenere if that were the case :)

We also look very closely at representing all price ranges. You can get a quality bottle of Cabernet Sauvignon for $18 or $200, with every price point in between.

Price sensitivity is important, I think - especially when you're dealing with a clientele that actually knows their wine, because it would also stand to reason that they also know that good wine doesn't have to be ridiculously expensive.

Steve, I tend to work that way -- from wine to food. Liborio tends to work opposite -- from food to wine. That's how I know we've got a great list put together.

We are anxiously awaiting wine release from Whistler's Knoll -- local wine as in about 5 miles from here. They will be bottling soon. Otherwise, we have some locals that we run as features.

We are so close to Door County (famous for cranberries & cherries) that the tendency is to "fruit it up". However, Wollershiem winery has some acclaimed Sauv. Blanc, I believe.

hmmmmmmmm, here's a fact that I don't think is very fun, as it is a favorite varietal of mine: Malbec has nearly-completely taken over the market share of Zinfandel. That has not stopped us from giving it another go with some EXCEPTIONAL new Zins

Another fun fact: the great, expensive brands often have "little brothers" at lesser price points. Such as: Decoy Pinot Noir is made by Duckhorn, Mer Soleil Silver Unoaked Chardonnay is made by Caymus, etc. Truly exceptional wines at 1/4 the price

Steve -- not always. Some years are just better for the grapes than others. Conundrum, for example, will vary by about 10 points in the ratings depending on what year you have -- the older ones sometimes score lower
